Hi Miller, thanks for the question! There’s a couple of ways you can do this?
When searching for data in EO Browser, you can of course see the date and time that each image was acquired before selecting which one to visualise.
If you wish to do this programatically, you can also do this using the Sentinel Hub Catalog API which is documented here. Request Builder is also a great place where you can experiment with this API changing your area of interest, time range and data collection.
