Is there a premium version of Sentinel-1?
A version that would offer a higher resolution and a daily access to data instead of a weekly low resolution data?

Unfortunately, there isn’t a premium version of Sentinel-1.
There is no SAR constellation that returns daily imagery globally at high resolution. However, whilst not available to purchase through Sentinel Hub there are some commercial satellites that are tasked to monitor certain areas of the world, you will get high resolution but not daily revisit times with these satellites. There is almost always a trade off between high resolution and high revisit times, although this is changing in the multispectral sector.
I would recommend researching Umbra Space, Airbus, Maxar, Capella Space or IceEye who all operate high resolution commercial SAR satellites.
