Is it possible to provide Sentinel-1 coherence products, which can be downloaded via your Python API?

No, this is currently not possible.
For coherence one has to start with Sentinel-1 SLC (we use GRD) and then execute pretty complex algorithm on top of it, which is difficult to be generalised and automated on large scale.

Could you please describe which Sentinel-1 coherence products you mean? Would it be raster-based or timeseries?
In KappaZeta (https://kappazeta.ee/) we process S-1 data, including the coherence computing. We also are working on parcel geometry based statistics API.
