To the best of my (limited) knowledge there are only a couple of satellite sensors based on L-band radar that allow you to estimate sea surface salinity (e.g. SMOS, Acquarius and SMAP come to my mind). Currently Sentinel Hub services do not support these satellites. In this regard, I found this link to contain useful information about SSS and remote sensing: it might be useful!
That being said, there are some studies (e.g. this one) that have tried to use ocean colour as a proxy for salinity. If you wanted to, you could use Sentinel-3 OLCI, which was designed to monitor ocean colour, to derive the information yourself.
